Easy Fall Meal
Sauteed Wild Mushrooms and Leeks with butter, fresh sage, tarragon & thyme*
Roasted Squash (this one is a beautiful Delicata) (about 40 min. at 350)
drizzled with light honey and fresh chopped chives & mint.
* this can also be the base to poach a fish like cod, haddock, flounder or sole.
Just lay the fish on top, add s&p to taste, 1/2 c. white wine and simmer 'til fish is done.

I loved collecting acorns when I was small. I would have buckets of them. I didn't do much with them, but the squirrels around my house found a veritable gold mine when they got into those buckets.

i found some tiny green acorns while shopping last weekend as well. they are like tiny little promises of the season to come.
